Snow day 3!!!! Can you believe it?

Yes, we are on to day 3 with no school due to the snow. I was pretty sure that we wouldn't have school today when I went past school yesterday hoping to get in to do some work and they still hadn't plowed the front driveway, the parking lots, and there were HUGE drifts in front of the doors closest to my classroom! And that was at 3 pm yesterday! I told LD that I didn't think they'd be ready for us today. Guess I was right! While I was preparing our Valentine's day dinner I heard on the radio that we didn't have school & the reason why - they just didn't have enough help to get things cleaned up at the many schools in our district.

So, now here it is 9:22 am Thursday & I'm still in my jammies & drinking coffee at HOME! I'm loving this!

LD & I did have a nice dinner at home last night for Valentines Day. I figured since I was able to be home all day I could whip something lovely together for us - we had Steak Diane (pan seared steak in a mushroom/shallot sauce, with roasted potatoes, and roasted veggies. We also had a really great (if I do say so myself) spinach salad with baby spinach, raspberries, a little bit of onion, and carmelized pecans on top. It was delish! I also made a strawberry/raspberry daquiri drink for us - yummy too! My mom would be so proud - I had all these "Valentine-y" foods - anything red/pink qualifies! I served the salad in heart shaped dishes, the drinks were red, the meat was pink inside, there were red peppers in the roasted veggies, Oh, I had made rice krispy treats on Tuesday - with pink sprinkles on them, so LD had those for dessert! Too much pink/red? I don't think so. I'm trying to figure out what I could have done to make the potatoes more festive. Hmmmmm....

Anyway, Happy day after valentines day! Happy 3rd snow day to me! Happy my only work day this week is FRIDAY! :) (Rubbing it in too much??)
